		<description>I didn&#039;t even think about Worcestershire have HFCS.  Der.  I like your mods though but Shaun would cry if there was no ketchup ;)  And when you&#039;re using the fattier beef, it&#039;s better to do the mound version rather than the pan version because the fat can run off-you just need something for drippings!

		<description>Meatloaf was a hit (hubbs went back for seconds and already noted that the leftovers will be &quot;great with eggs in the morning&quot;).  Not dry at all (the curse of meatloafs, in my opinion) and the mustard powder gives it a nice flavor boost.

I made a few mods, but not many:
- Added some marjoram, just because I think it&#039;s so tasty with ground beef.
- Added some cayenne, for a teeny bit of kick, but just a teeny bit so I didn&#039;t overwhelm the rest of the spices.
- Skipped the ketchup (since I&#039;m not a huge fan) and lightly brushed the top with olive oil instead.

Of note, the ground beef I used wasn&#039;t *that* lean (16% fat), and there was quite a bit of drippings at the end.  I even left it uncovered for half the time in hopes most of it would burn off, but it didn&#039;t really work.  Had to drain the pan a few times before I could cut and serve.  If I had it to do over again, I would use leaner beef and maybe try topping with thin tomato slices.

Also, I need to try get my hands on an organic/natural Worcestershire sauce.  I know Annie&#039;s Naturals and a few other companies do it.  I love the way it makes things taste, but sadly a lot of mainstream versions (including what I have in my fridge) have high fructose corn syrup.  :-(
