Corn Bread
I altered the recipe that’s on the back of the Albers Corn Meal box and I think it’s delicious!
Ingredients:
-1 cup corn meal
-1 cup whole wheat pastry flour
-1 TBSP baking powder
-1 tsp salt
-3 TBSP agave necter
-2 TBSP honey
-1 cup rice milk
-1 egg, lightly beaten
Instructions:
Preheat oven to 400*. Non-stick spray an 8-inch-square pan
Combine all the dry ingredients in a large bowl and mix. In a smaller bowl combine the wet ingredients and mix well.
Add wet ingredients into the dry ingredients and mix until just blended. Pour into prepped pan.
Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

I need to get a smaller cast iron skillet. I have a HUGE one, one with grill marks, and a dutch oven, but I’m still on the lookout for a smaller, more manageable one that would be the PERFECT size for this recipe (and popping corn!)
