Amaranth
Last night I cooked up some Amaranth for dinner. I haven’t had it in YEARS but I do remember really liking it. I took some pictures to show y’all what it looks like since most people have never had it.
It’s very nutty tasting to me and has a crunch-ier texture than most grains. I made it with some chicken stock and then topped it with a little butter/olive oil mix. ‘Twas delicious. I have to warn you though that it does come out looking very much like it went IN-so don’t be shocked. 😉
Lu LOVED it and ate a good 2 cups of it. I tried to get a picture of her amaranth covered self but it’s so small that you can’t really see it.
Last night Shaun had to work late so I was in bed by 8:30 and fast asleep by 9. We didn’t set the alarm and we both woke up around 7:15. It felt glorious!
The sun is shining today and I took the opportunity to wear my flippies.
One of my co-workers gave me shit for my shoe attire but I told him that I didn’t care. It was flip flop weather! And hey, I have co-workers who wear their bike shorts all day with NO shoes so I think my flippies are A-OK.

jeans and t-shirts all the way! luckily we work in a VERY laid-back city, so it would almost be inappropriate to wear nicer business clothes! gotta love that… 🙂
We’re super casual at my office too–jeans, t-shirts…hell, I could get away with sweats if I wanted to. I sometimes wish I worked in a place that forced me to dress up more because some days I feel like a slob…but at the same time, I totally LOVE being able to throw on a sweatshirt and go to work.
Speaking of work, your hours seem flexible and the environment seems nice and relaxed–can you do a “Day in the Life of Chelsea at the Office” post and tell us more about what you do? 🙂
It has been nice and sunny out! I have never heard or had Amaranth interesting!

I’m with Steph, I’m lucky if I get out of my jammies at all!
I can wear Nike running short and flip flops and no one will really tell me anything because I’m a student worker. 😉 The ladies I work with either wear suits or nice pants and shirts. Tell that coworker of yours to stick it. If you’re allowed to wear something like that, you should take full advantage of it.
business casual — no jeans. although i sneak really darkwash, tailored ones in on friday. and we’re a skeleton crew on the weekends, so i wear whatever i want. i also don’t wear socks once it’s warm out 🙂 sandals are ok, but no flippies unless preggers and nothing else fits.
(Haha – we are funny!!)

i’m a fan of wearing flip flops if you wanna. work schmerk!
Blah. My work attire is jeans or khaki-colored pants with an ugly navy blue 100% polyester man-sized (read: not tailored for a woman at all) polo with or without an accompanying work-issued sweatshirt in white, maroon, or navy. Closed toe and back shoes are also required. Booooooo.
We will have to get some amaranth. Whatcha got for quinoa? I got some in my pantry and need some inspiration.
